Braised Red Cabbage And Apples - cooking recipe

4 Tbsp. bacon grease
2 Tbsp. sugar
1 onion, chopped
2 lb. shredded red cabbage
1 tart apple, thinly sliced
2 Tbsp. cider vinegar
1/2 tsp. caraway seed
1/4 tsp. nutmeg
1/2 c. dry red wine
1/2 c. water
1/8 tsp. cayenne pepper
salt
Preparation

Melt bacon grease in a large skillet; add sugar and cook, stirring, for 2 minutes.
Add onions and cook slowly until lightly colored.
Stir in cabbage, apples, vinegar, wine and spices.
Cook over low heat, covered, for 10 minutes, then add water and cook, with cover askew, stirring occasionally, for 30 to 40 minutes. Add salt to taste.
Serve either hot or cold.
