Pecan Pumpkin Muffins - cooking recipe
Ingredients

1/2 c. unsalted butter
1/4 c. sugar
1 1/3 c. all-purpose flour
2 eggs
1 tsp. baking soda
1/2 tsp. salt
1 can pumpkin puree
1/2 tsp. each: nutmeg and cinnamon
1 c. pecans
1/2 tsp. vanilla extract
2 tsp. fresh lemon juice
3/4 c. raisins
Preparation

In a bowl, beat butter and sugar together until creamy and smooth.
Add eggs and beat well.
Add flour, baking soda and salt and mix until combined.
Stir in pumpkin, vanilla, lemon juice and raisins.
Pour into buttered tin and bake in preheated 325\u00b0 oven until tester comes out clean, about 25 to 30 minutes.
Remove from tin and cool on wire rack.
