Yellow Squash Muffins - cooking recipe

Ingredients
    2 lb. yellow squash
    1 c. butter
    3 c. all-purpose flour
    1 tsp. salt
    2 eggs
    1 1/2 c. sugar
    1 Tbsp. plus 2 tsp. baking powder
Preparation
    Squash should be cooked about 15 minutes.
    Mash squash into a pulp (some chunks are okay).
    Combine with eggs and butter.
    Stir well. Set aside. Combine rest of the ingredients.
    Add to squash mixture.
    Grease muffin tins and fill 3/4 full. Bake at 375\u00b0 for 20 minutes or until picks come out clean.
