Potato Puffs - cooking recipe

Ingredients
    2 eggs
    1 c. mashed potatoes
    1/2 c. all-purpose flour
    1/4 tsp. salt
    1 1/2 tsp. baking powder
    oil for deep frying
Preparation
    Mix all ingredients.
    Heat in saucepan or kettle for 1 minute. Drop mixture by heaping teaspoonfuls, 4 or 5 at a time, into hot oil.
    Fry 2 to 3 minutes, turning once or until golden brown.
    They brown very quickly.
    Drain oil out by paper towel.
    Yields 1 1/2 to 2 dozen.
