Roasted Pepper Salad - cooking recipe

Ingredients
    2 doz. green peppers, washed (left whole)
    salt
    1 tsp. chopped fresh parsley
    1 clove garlic, quartered (to give flavor)
    a little vinegar
Preparation
    Heat oven to 400\u00b0.
    Place peppers on broiler pan and roast until they turn light brown; keep turning peppers over until brown on all sides.
    When roasted, peel skins off and take out seeds. Cut in strips.
    Place in dish and sprinkle with salt.
    Add parsley, garlic and vinegar.
    Stir and refrigerate at least 1 hour before serving.
    This gives the peppers and flavoring a change to settle.
