Apricot Chicken With Rice - cooking recipe

Ingredients
    2 c. uncooked Uncle Ben's converted rice
    3 or 4 whole chicken breasts
    1 pkg. onion soup mix
    1 c. apricot preserves
    1 (8 oz.) bottle Russian salad dressing
    2 1/2 c. water
Preparation
    Put uncooked rice in bottom of 10 x 13-inch casserole dish. Mix dry onion soup mix, apricot preserves and salad dressing. Using half of this mixture, stir in 2 1/2 cups water.
    Pour over rice.
    Place chicken on top of rice and brush with remaining salad dressing mixture.
    Bake at 350\u00b0 for 1 1/2 hours.
