Cranberry Orange Muffins - cooking recipe

Ingredients
    1 3/4 c. all-purpose flour
    5 Tbsp. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    1 beaten egg
    3/4 c. orange juice
    1/3 c. cooking oil
    1 c. fresh or frozen cranberries, chopped
Preparation
    Spray muffin tins with nonstick spray coating.
    In a bowl, stir together flour, 2 tablespoons of the sugar, baking powder and salt.
    Make a well in center.
    In small bowl combine egg, orange juice and oil and add all at once to flour mixture.
    Stir until moist; it will be lumpy.
    Toss cranberries with 2 tablespoons sugar and stir into mixture.
    Fill muffin cups 3/4 full and sprinkle sugar on top.
    Bake in preheated 400\u00b0 oven 18 to 20 minutes or until golden.
    Remove from tins.
    Makes 12.
