Wrapped Catfish - cooking recipe
Ingredients

8 dried corn husks
4 Tbsp. olive oil
handful small white onions, quartered
4 chiles (serranos), finely chopped
10 tomatilloes, husks removed and chopped
1/2 tsp. salt
4 lb. catfish fillets
Preparation

Soak corn husks in water for 1 hour.
Rinse, drain and put aside.
Heat olive oil in skillet, then add onions and saute 2 minutes.
Add the chiles and tomatillos and cook for 3 minutes, stirring constantly.
Add salt and set aside to cool.
