Vegetable Soup - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    2 Tbsp. butter
    1 c. chopped leeks
    1/2 c. chopped onions
    2 cloves garlic, minced
    1 c. sliced carrots
    1 c. chopped potatoes
    1 c. peas
    1 c. chopped green beans
    1 c. chopped turnips
    1 c. chopped celery
    1/2 c. parsley
    2 (8 oz.) cans tomato sauce
    salt and pepper
Preparation
    Saute leeks, onions and garlic in oil and butter.
    Add remaining ingredients and 6 cups of water.
    Simmer for 2 hours, covered.
    Makes about 8 servings.
