2 c. Bisquick baking mix
1/2 tsp. cinnamon
1 egg
1 1/3 c. milk
3/4 c. grated apple (about 2 medium)
Cider Sauce (follows)
Preparation

Beat baking mix, cinnamon, egg and milk with rotary beater until smooth.
Stir in apple.
Grease griddle if necessary.
Pour batter by 1/4-cup measuring cupfuls onto hot griddle.
Bake until bubbles appear.
Turn; bake other side until golden brown.
Serve with warm Cider Sauce.
If you wish, top with dairy sour cream. Makes 18 (4-inch) pancakes.
