Chicken Fried Rice - cooking recipe
Ingredients

1 c. cooked, diced chicken
1 Tbsp. soy sauce
1 c. uncooked long-grain rice
2 1/2 c. chicken broth
1/3 c. salad oil
1/2 c. chopped onion
1/4 c. green pepper
1/4 c. celery
2 beaten eggs
1 c. shredded lettuce or red cabbage
Preparation

Cook chicken. Combine chicken and soy sauce. Sprinkle with 1/2 teaspoon salt. Let sit for 15 minutes. Cook rice in hot oil. Reduce heat. Add chicken and broth. Simmer, covered, 20 to 25 minutes. Stir in onions, green peppers and celery. Cook, uncovered. Push rice to side. Add eggs and cook until almost set. Blend into rice. Stir in lettuce or red cabbage.
