Fruited Sweet Potatoes - cooking recipe

Ingredients
    16 oz. pared sweet potatoes, cut into 1-inch pieces
    2 Tbsp. water
    12 dried apricot halves, chopped
    1 small Granny Smith apple, pared, cored and chopped
    2 Tbsp. raisins
    1/4 c. orange juice
    1 oz. orange flavored liqueur
    1 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    dash of salt
Preparation
    In a 2-quart microwavable casserole, combine potatoes with the water.
    Cover and microwave on High 10 minutes or until potatoes are tender, stirring once. Add remaining ingredients. Stir well to combine. Cover and microwave on High 3 minutes or until apple is tender-crisp.
    Yields 4 servings.
