Surprise Sweet Potatoes - cooking recipe

Ingredients
    1 (16 oz.) can apricot halves
    1 1/4 c. firmly packed brown sugar
    1 1/2 Tbsp. cornstarch
    1/4 tsp. salt
    1/4 tsp. cinnamon
    2 tsp. grated orange rind
    2 Tbsp. butter
    1/2 to 3/4 c. pecan halves
    1 (29 oz.) can sweet potatoes, drained
Preparation
    Drain apricots, reserving liquid.
    Combine brown sugar, cornstarch, salt, cinnamon and orange rind.
    Blend well.
    Gradually add apricot syrup, stirring constantly.
    Bring to a boil over medium heat and boil 2 minutes.
    Add apricots, butter and pecans. Stir until butter is melted.
    Halve sweet potatoes and arrange in lightly greased 1 1/2-quart shallow baking dish.
    Cover with apricot sauce.
    Bake, uncovered, in 375\u00b0 oven for 25 minutes.
