Potato Soup - cooking recipe

Ingredients
    1/4 c. oil
    1 medium onion
    3 carrots, sliced thick
    6 c. potatoes, diced and peeled
    7 c. water
    1 Tbsp. soy sauce
    2 Tbsp. Mellow White Miso
    1 tsp. concentrated vegetable bouillon or 1 cube
    1 tsp. pepper
    1 tsp. onion powder
    1 tsp. garlic powder
Preparation
    Saute onion in oil until soft.
    Add carrots, potatoes and water.
    Bring to boil.
    Add Miso, soy sauce, vegetable bouillon and spices, stirring occasionally while adding them.
    Turn down to medium heat; cover and let cool 40 minutes, stirring occasionally. Makes about 6 cups of soup.
