Turkey Tetrazzini - cooking recipe
Ingredients

1/2 stick butter
1/4 c. flour
2 c. chicken broth
2 egg yolks
2 Tbsp. sherry
1/2 c. light cream
1/2 lb. mushrooms, sliced and sauteed in butter
3 c. diced cooked turkey
1 (8 oz.) pkg. spaghetti, cooked and drained
2 Tbsp. Parmesan cheese
1/4 c. slivered almonds
Preparation

Melt butter and stir in flour. Gradually stir in chicken broth with wire whisk. Cook over low heat until mixture thickens. Mix egg yolks, sherry and cream. Gradually beat hot sauce into egg mixture. Reheat until sauce is hot and fold in mushrooms and turkey. Add cooked spaghetti. Pour into ovenproof serving dish and top with Parmesan cheese and almonds. Put under broiler and brown until cheese and almonds are golden. Serves 6.
