8 c. apples, peeled, cored and thinly sliced
1/2 tsp. lemon zest
2 tsp. lemon juice
3/4 c. dark brown sugar
2 Tbsp. unsalted butter
Preparation

Put apple slices into a large saucepan.
Grate lemon zest into the pan.
Cover and stew the apples over low heat until tender, 30 minutes.
Mash the apples with a potato masher and squeeze in lemon juice.
Stir in sugar and butter and simmer uncovered until thickened.
Stays fresh in refrigerator up to 5 days.
