Watermelon Pickles - cooking recipe
Ingredients

2 lb. watermelon rind
1/4 c. granulated pickling salt
2 c. sugar
1 c. white vinegar
1 Tbsp. whole cloves
1/2 lemon, thinly sliced
Preparation

Trim dark green and pink parts from rind; cut into 1-inch squares.
Measure 6 cups.
Soak overnight in solution of salt and 1 quart water.
Drain and rinse.
Cover with cold water.
Cook for 25 minutes, until tender.
