Sweet Potato Casserole - cooking recipe

Ingredients
    5 large sweet potatoes
    1 c. butter
    juice of 2 oranges
    4 eggs
    1/2 to 1 c. sugar
    grated rind of 2 oranges
    2 Tbsp. butter
    1 c. brown sugar, packed firm
    1 c. chopped pecans
Preparation
    Cook and peel the sweet potatoes.
    Beat with electric mixer until fluffy.
    Add the softened butter, orange juice and rind, eggs and sugar.
    Beat well.
    Spoon potato mixture into a 3-quart casserole.
    Cover with topping.
    Bake at 350\u00b0 for 30 minutes. Makes 8 to 10 servings.
