Smothered Chicken With Vidalias - cooking recipe

Ingredients
    4 chicken breasts
    1/3 c. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 c. shortening or oil
    1 pkg. dried chicken noodle soup mix
    1 medium Vidalia onion, sliced thinly and separated
    1 c. evaporated milk
    1 c. water
Preparation
    Combine flour, salt and pepper in a plastic food storage bag. Add chicken and shake to coat well.
    In 10-inch skillet, melt shortening or oil and brown chicken.
    Drain off fat and sprinkle soup mix and onion over chicken in skillet.
    Mix together milk and water and add to skillet.
    Cover and cook over low heat about 30 minutes or until chicken is done.
    If dish seems too dry, add more liquid.
    Serve over rice.
