Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. ground onion
    5 Tbsp. salt
    1 chopped green pepper
    4 c. white sugar
    2 1/2 c. white vinegar
    2 tsp. turmeric
    2 Tbsp. cornstarch
    1 (4 oz.) jar chopped pimentos
    1 tsp. nutmeg
    2 tsp. celery seed
    1/2 tsp. pepper
Preparation
    Mix zucchini, onion and salt; cover with water and allow to set a minimum of 5 hours or overnight.
    When time is up, bring to a boil the remaining ingredients.
    Combine boiled syrup with drained zucchini and allow to simmer 1/2 hour.
    Put mixture in hot canning jars and seal.
