Eggplant Parmesan - cooking recipe
Ingredients

1 bag rice (boil-in-bag)
1 eggplant, sliced
1 medium onion, chopped
2 tsp. parsley flakes
1 bell pepper, chopped
4 oz. mushrooms
2 tsp. oregano
tomato sauce
1 c. grated Parmesan
2 c. Mozzarella cheese
Preparation

Mix onion, garlic, parsley, bell pepper, mushrooms and oregano.
Add rice; pour into a baking pan.
Put sliced eggplant on top of rice mixture.
Pour tomato sauce and Mozzarella cheese on top of eggplant.
Bake at 350\u00b0 for 30 to 45 minutes.
Sprinkle with Parmesan cheese when done.
