Tapioca - cooking recipe

Ingredients
    2 c. skim milk
    2 Tbsp. quick cooking tapioca
    1 egg, separated
    1/8 tsp. salt
    6 pkg. sweetener (Equal)
    1 or 2 tsp. vanilla
Preparation
    Combine milk, tapioca, egg yolk and salt.
    Mix well.
    Let stand 5 minutes.
    Microwave on High for 8 to 10 minutes or until boiling.
    Stir once during preparation.
    Let cool, covered, 5 to 10 minutes.
