Wood Chuck - cooking recipe

Ingredients
    1 stick butter
    1/2 c. + 2 Tbsp. flour
    1 qt. milk
    1 c. grated cheese (4 oz.)
    2 small cans mushrooms
    1/2 c. diced celery
    2 1/2 c. cooked turkey or chicken, diced
    3 hard-boiled eggs
    1 large can plus 1 small can chow mein noodles
    2 tsp. butter
Preparation
    Make a roux of flour and melted butter.
    Add milk.
    Cook to thicken.
    Add cheese and remove from heat.
    Stir until cheese melts.
    Saute mushrooms and celery in 2 teaspoons butter; add to sauce.
    Add turkey or chicken meat (cooked and diced) and 2 hard-boiled eggs (diced).
    Serve on plates over the Chinese noodles.
    Garnish with slices of the 3rd egg.
