Heart Healthy Chicken Stir-Fry - cooking recipe

Ingredients
    1 lb. boneless chicken breast in bite size pieces
    2 Tbsp. canola oil
    1 Tbsp. margarine
    Lawry's seasoned salt
    1 (8 oz.) can Chun King sliced water chestnuts
    1 (8 3/4 oz.) can Del Monte whole kernel corn
    1 (8 1/2 oz.) can Del Monte peas and carrots
    2 c. Minute rice, cooked according to pkg. directions
    lite soy sauce
Preparation
    Heat oil and margarine in pan on top of stove over medium heat; add chicken pieces and sprinkle with Lawry's seasoned salt to taste.
    Stir-fry until done.
    While chicken is cooking, drain the liquid from each vegetable and place vegetables in microwave-safe casserole dish and heat them in microwave for 3 minutes, then drain the accumulated liquid.
    Add the vegetable mixture to the cooked rice.
    Serve the cooked chicken over the vegetable and rice mixture.
    Add soy sauce to taste.
