Thimbleberry Fritters - cooking recipe

Ingredients
    1 c. sifted flour
    1 tsp. baking powder
    2 Tbsp. sugar
    2 eggs, separated
    2 Tbsp. water
    1 1/2 c. thimbleberries
Preparation
    Sift flour and baking powder together.
    Add sugar, egg yolks and water.
    Blend well.
    Beat egg whites stiff, then fold into flour mixture along with berries.
    Drop dough from a tablespoon into hot (365\u00b0) deep oil.
    Fry until fritters are golden brown. Sprinkle with confectioners sugar, if desired.
    Makes 12.
