Caramelized Pineapple(Servings: 8) - cooking recipe

Ingredients
    1 medium pineapple
    1/4 c. brown sugar
Preparation
    Cut pineapple in half.
    With a sharp grapefruit knife, cut pulp from shell without damaging the shell.
    Cut pineapple pulp into 1-inch cubes.
    In a skillet over medium heat, toss cubes with brown sugar until caramelized.
    Serve in hollowed out pineapple shell.
