Black Beans And Rice Salad - cooking recipe

Ingredients
    2 c. cooked rice, cooled to room temperature
    1 c. canned black beans
    1 medium tomato, chopped
    1/2 c. shredded Cheddar cheese (optional)
    1 Tbsp. minced parsley
    1/4 c. light Italian dressing
    1 Tbsp. lime juice
    lettuce leaves
Preparation
    Combine the rice, beans, tomatoes, cheese (if desired) and parsley in large bowl.
    In a cup, whisk the dressing and lime juice; pour over the rice mixture; toss lightly.
    Serve on lettuce. Serves 4.
