Canadian Cheddar Cheese Soup(Serves 4) - cooking recipe

4 Tbsp. butter or margarine (1/2 stick)
1/3 c. grated carrot
2 c. chicken broth
1/2 tsp. paprika
1 c. shredded sharp Cheddar cheese (about 4 oz.)
1/3 c. minced yellow onion
2 Tbsp. all-purpose flour
1/2 tsp. dry mustard
1 c. half and half
1 c. beer
Preparation

Melt the butter in a 3-quart saucepan over moderate heat. Reduce the heat to low; add the onion and carrot and cook, covered, for about 5 minutes or until the onion is soft.
Stir in the flour and cook 3 or 4 more minutes.
Gradually add the chicken broth, stirring constantly.
Stir in the mustard and paprika.
