Green Tomato Fish Pickles - cooking recipe
Ingredients

6 qt. green tomatoes, cut in quarters or eighths, depending on size
1 c. bell pepper, chopped
1 qt. onions, chopped
1 hot pepper, minced
3/4 c. salt (canning salt)
6 c. sugar
1 tsp. mustard seed
1/2 gal. white vinegar
Preparation

Sprinkle salt over the tomatoes, pepper, onions and hot pepper.
Let stand overnight.
Drain off liquid.
Squeeze out all the liquid so it won't be too salty.
Mix sugar, mustard seed and vinegar.
Heat until sugar dissolves.
Then add vegetable mixture. Heat until vegetables change color.
Stir and let boil about 5 minutes.
Put in jars and seal.
I put the filled and sealed jars in hot water bath for 8 to 10 minutes.
