Ingredients

6 c. mashed peaches
1 c. sugar
3 eggs
1 1/2 c. sugar
2 Tbsp. all-purpose flour
1/2 tsp. salt
1 qt. milk
1 c. whipping cream
1 tsp. vanilla extract
Preparation

Combine peaches and 1 cup of sugar, stir well, and set aside. Beat eggs with an electric mixer at medium speed until frothy. Combine 1 1/2 cups sugar, flour and salt; stir well.
Gradually add sugar mixture to eggs, beating until thick.
Add milk, mix well.
Pour egg mixture in a large saucepan.
Cook over low heat, stirring constantly, until mixture thickens and coats metal spoon (about 15 minutes).
Remove from heat and set pan in cold water; stir gently until cool.
Stir in cream and vanilla.
Add peaches, stirring well.
