Beef Enchilada Rice - cooking recipe

Ingredients
    1 lb. hamburger or turkey
    1 onion, chopped
    1 green pepper, chopped
    2 c. cooked rice
    1 pkg. dry enchilada spice mix
    3/4 c. Pace picante sauce
    3/4 c. tomato juice
    1 c. shredded Cheddar cheese
Preparation
    Brown meat, onion and green pepper together in a skillet until cooked, then drain well.
    Mix in a large bowl the rice, spices, picante sauce and tomato juice.
    Fold in the cooked meat mixture. Place in a greased casserole dish and bake in a 350\u00b0 oven for 25 minutes.
    Remove from the oven and sprinkle the top with the cheese.
    Return to the oven and bake for 10 more minutes.
