Stuffed Chicken Breasts With Spinach, Ricotta And Cheddar - cooking recipe

Ingredients
    1/2 small onion, finely chopped
    1 tsp. butter
    1/2 (10 oz.) pkg. chopped spinach
    1/2 lb. Ricotta cheese
    1 c. chopped parsley
    1 Tbsp. oregano or basil
    1 clove garlic, mashed
    1/2 c. shredded Cheddar
    salt, pepper and nutmeg to taste
    6 chicken breasts
Preparation
    Saute onion in a teaspoon butter and combine with the other ingredients.
    Place breasts skin side up.
    Loosen skin from one side of breast and stuff 1/3 cup of filling under skin.
    Continue with other breasts.
    Bake in buttered dish for 30 to 35 minutes until golden brown.
    Cool and slice for serving.
