Rice With Black Beans - cooking recipe

Ingredients
    1 medium onion, chopped
    1 Tbsp. oil
    1 (14 1/2 oz.) can stewed tomatoes
    1 (16 oz.) can black beans (undrained)
    1/2 tsp. dried oregano leaves
    1/2 tsp. garlic powder
    1 1/2 c. instant brown rice
Preparation
    Cook and stir onion in hot oil in saucepan until tender, but not browned.
    Add tomatoes, beans, oregano and garlic powder. Bring to boil.
    Stir in rice.
    Return to boil.
    Reduce heat and cover; simmer 5 minutes.
    Remove from heat.
    Let stand 5 minutes. Makes 8 servings.
    One serving equals 170 calories, 7 g protein, 32 g carbohydrate, 3 g fat, 0 cholesterol, 340 mg sodium and 4 g dietary fiber.
