Baked Yam And Cranberry Casserole - cooking recipe
Ingredients

1 (40 oz.) can drained yams
1 (12 oz.) bag fresh cranberries
1 1/2 c. pecans (optional)
1/4 c. orange juice
3/4 tsp. cinnamon
1/8 tsp. mace
1 small orange, sliced
2 Tbsp. butter
dash of salt
1/4 tsp. nutmeg
1 1/2 c. sugar
Preparation

Combine cranberries, sugar, orange slices, orange juice and pecans in a 2-quart casserole.
Bake, uncovered, for 30 minutes at 375\u00b0.
Place yams on top and bake another 20 minutes.
Try using freshly peeled yams.
Place chunk yams in casserole and add in this order:
cranberries, orange juice and slices, sugar and salt and bake until done (about 45 minutes to 1 hour) at 375\u00b0.
