Enchiladas - cooking recipe

Ingredients
    2 Tbsp. margarine
    1 onion, chopped
    1 green pepper, chopped
    1 clove garlic, minced
    2 Tbsp. flour
    1/2 tsp. salt
    1 tsp. chili powder
    1 c. tomatoes
    1 c. meat stock or water
Preparation
    Cook onion, green pepper and garlic in butter until soft.
    Add flour, salt and chili powder; stir until smooth.
    Add tomatoes and meat stock or water.
    Cook until thick and smooth, about 5 minutes.
    Strain if desired (reserve vegetables).
    Makes 3 cups.
