Shrimp-Rice Salad - cooking recipe

Ingredients
    1 lb. deveined, cooked shrimp
    1 can water chestnuts, drained and sliced
    1/2 c. sliced ripe olives
    1 1/4 c. mayonnaise
    1 tsp. soy sauce
    1/4 tsp. curry powder
    2 c. cooked, chilled rice
    1 c. chopped celery
    1/4 c. chopped green onions
    1 Tbsp. lemon juice
    1/4 tsp. ground ginger
Preparation
    Drain shrimp and chill.
    Combine rice, water chestnuts, celery, olives and onions in a large bowl.
    Combine mayonnaise, lemon juice, soy sauce, ginger and curry powder.
    Mix well.
    Pour over rice mixture and mix well.
    Chill at least 1 hour.
    Fold in shrimp.
    Serve on lettuce and garnish with tomato wedges.
