Dijon-Roasted New Potatoes(Lighter Eating - 3 Points) - cooking recipe

Ingredients
    1 tbsp. olive oil
    2 tbsp. Dijon mustard
    3/4 tsp. paprika
    1/4 tsp. dried thyme
    1/2 tsp. salt
    1/4 tsp. black pepper
    1 1/2 pounds quartered new potatoes
Preparation
    Coat a 9 X 13 baking dish with cooking spray. Heat over to 425\u00b0. Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl. Add potatoes and stir until they are coated. Transfer potatoes to the baking dish and roast 15 minutes. Stir and roast another 15 minutes.
