Baked Eggplant - cooking recipe

Ingredients
    2 large eggplant, sliced
    2 c. tomato juice or spaghetti sauce
    3 Tbsp. grated Parmesan cheese
    1 green pepper, cut up in strips
    salt, pepper and minced garlic
    2 Tbsp. chopped parsley
Preparation
    In 9 x 13-inch baking dish, alternate layers of tomato juice, sliced eggplant (which have been sprinkled with salt and pepper), garlic and parsley.
    Top all with cheese and strips of green pepper.
    Cover with foil, slash the top of foil.
    Bake at 350\u00b0 for 45 minutes.
