Ingredients
    17 to 19 qt. diced, drained tomatoes
    3 to 4 qt. chopped onions
    3 to 4 qt. chopped peppers
    2 jars minced garlic
    4 Tbsp. each citric acid and salt
    1 c. vinegar
    16 oz. lime juice
    2 c. chopped coriander leaves
Preparation
