Taco Chicken - cooking recipe

Ingredients
    1/2 pkg. taco seasoning mix
    4 servings Minute Rice
    1 lb. boneless chicken breasts, diced very small
    1/2 c. chopped onion
    1/4 c. margarine
    1 (8 oz.) can stewed tomatoes
    1/2 jar salsa mix
    1/2 c. shredded Cheddar
Preparation
    Preheat oven to 400`.
    Dice chicken and dredge in taco seasoning (may place chicken/seasoning in plastic bag and shake to coat).
    Saute onion and chicken in margarine until brown.
    Prepare rice according to directions and drain.
    In a casserole dish, arrange rice around edges, and place chicken and onions in the middle.
    Combine tomatoes and salsa and pour over chicken. Sprinkle with cheese.
    Bake for 40 minutes or until cheese is browned.
    May be served in warmed fajitas or over taco chips.
