Ingredients

1 medium zucchini, grated and drained
1 egg, beaten
1 Tbsp. cooking oil
1 c. pancake mix
3/4 c. milk
2 Tbsp. Parmesan cheese
Preparation

Lightly combine all ingredients and allow to set 1/2 hour. Add more milk for thinner pancakes.
Cook on lightly greased hot griddle.
