Mayonnaise - cooking recipe

Ingredients
    1 c. low-fat cottage cheese
    2 Tbsp. safflower oil
    1 Tbsp. apple cider vinegar
    1/4 tsp. salt
    dash of pepper
Preparation
    In a blender or a food processor with a metal blade, process all ingredients until smooth.
    Refrigerate, covered, for at least 24 hours before using.
    Yields 1 cup.
