Three Cheese Spinach Roll-Ups - cooking recipe

Ingredients
    8 lasagna noodles
    1 red pepper, seeded and chopped
    2 c. shredded Mozzarella
    3/4 c. Ricotta cheese
    1 egg, slightly beaten
    1/4 c. butter
    1/4 c. flour
    1/8 tsp. pepper
    1/2 tsp. salt
    1 c. light cream or half and half
    3 Tbsp. butter
    1/2 c. onion, chopped
    2 (10 oz.) pkg. frozen spinach, finely chopped, cooked, squeezed and sauteed in butter
    1 c. milk
Preparation
    Preheat oven to 375\u00b0.
    Cook noodles according to package directions.
    Cool in a bowl of cold water; set aside.
    Saute onion and red pepper with 3 tablespoons of butter until tender, about 5 minutes.
    Combine spinach, onion, red pepper, 1 1/2 cups Mozzarella, Ricotta, 1/2 cup Parmesan and egg; set aside.
