Gingered Carrots And Apples - cooking recipe

Ingredients
    1 lb. carrots, sliced
    1 Tbsp. margarine or 1/4 to 1/2 c. vegetable broth or defatted chicken broth
    1/3 c. finely chopped onion
    2 medium Golden Delicious apples, peeled and thinly sliced
    1/2 c. unsweetened apple juice
    2 tsp. brown sugar or white sugar
    1 tsp. lemon juice
    1/2 tsp. ginger
    dash of nutmeg
    dash of salt (optional)
Preparation
    Put carrots in pan of boiling water and simmer until just tender and crisp, or steam the carrots.
    Do not overcook.
    Saute onion in margarine or the broth 2 to 3 minutes.
    Add sliced apples and saute 4 to 5 minutes.
    Add apple juice, carrots, sugar, lemon juice, salt, nutmeg and ginger.
    Cover and simmer 4 to 5 minutes.
