Giblet Gravy - cooking recipe

Ingredients
    1/2 lb. chicken or turkey giblets and neck
    celery leaves (optional)
    onion slices (optional)
    1/2 c. all-purpose flour
    dash of pepper
    2 hard-cooked eggs, chopped (optional)
Preparation
    Remove liver and set aside.
    In a saucepan, place the giblets and neck in lightly salted water to cover; add a few celery leaves and onion slices, if desired.
    Cover; simmer for 1 hour or until tender.
    Add the liver; simmer 5 to 10 minutes or until tender (turkey livers will take 20 to 30 minutes).
    Remove and chop the cooked giblets.
    Discard neck.
