Potato Basque Soup - cooking recipe
Ingredients

1 lb. Italian sausage (hot or mild) or Spanish chorizo, sliced
1/2 c. chopped onion
2 c. (No. 1 can) tomatoes
4 potatoes, pared and diced (6 c.)
1/4 c. chopped parsley
1 c. diagonally sliced celery
2 Tbsp. chopped celery leaves
1 1/2 c. water
2 beef bouillon cubes
1 bay leaf
1 tsp. salt
1/2 tsp. dried leaf thyme
1/4 tsp. pepper
1 Tbsp. lemon juice
Preparation
-
In a large saucepan, brown sausage over medium heat.
Add onion and cook 5 minutes.
Add rest of ingredients; bring to a boil.
Reduce heat and simmer, uncovered, 40 minutes or until potatoes are tender.
Serves 6.
