Baked Eggplant - cooking recipe

Ingredients
    1/2 c. mayonnaise
    1/4 c. finely chopped onion
    pepper to taste
    1 medium eggplant, peeled and sliced into 1/4-inch slices
    32 round buttery crackers, crushed
Preparation
    In small bowl, combine mayonnaise, onion and pepper.
    Brush on both sides of eggplant; dip in cracker crumbs.
    Bake on ungreased cookie sheet in 350\u00b0 oven, turning once until browned, about 30 minutes.
    Serve hot.
    Always soak sliced eggplant in salted water about 30 minutes before cooking.
