Gumbo - cooking recipe
Ingredients

3 Tbsp. bacon drippings
1 1/2 tsp. salt
2 tsp. black pepper
1 1/2 c. chopped celery
1 can tomato sauce
1 tsp. hot sauce
1 pkg. frozen okra
2 1/2 qt. water
3/4 c. all-purpose flour
2 onions, chopped
1 large can tomatoes
1 1/2 tsp. gumbo file
1 pkg. jumbo wieners
8 bay leaves
10 to 12 crabs, cooked and cleaned
1 1/2 lb. shrimp, peeled and rinsed (fresh)
1 lb. crabmeat (fresh)
hot cooked rice
Preparation

Heat bacon drippings in skillet over medium heat.
Stir in onion and celery until tender.
Add flour, salt and pepper.
Stir like gravy until mixture is like paste.
Remove from heat and combine all other ingredients in large pot.
Stir in onion mixture.
Bring to boil.
Cover and reduce heat and simmer for 2 hours, stirring occasionally.
Serve over rice.
