3 c. grated zucchini
1 c. dry rice
1 can cream of mushroom soup
1 small onion, diced
1 green pepper, diced
1 tsp. black pepper (optional)
4 Tbsp. Parmesan cheese
Preparation

Mix all ingredients in a greased 10-inch square casserole. Bake, covered, at 350\u00b0 for 1 hour.
