Eggplant Casserole - cooking recipe

Ingredients
    4 large eggplants
    1 1/2 lb. ground beef
    2 onions, chopped
    1 bell pepper, chopped
    2 ribs celery, chopped
    seasoning
Preparation
    Peel and cube eggplants.
    Soak in cold, salted water.
    Drain and cook down in 3 tablespoons bacon grease until tender, about 2 hours.
    In another pot, cook remaining ingredients.
    Mix cooked eggplants and meat mixture together.
    Add bread crumbs or rice to absorb liquid.
    Bake at 350\u00b0 until well heated.
    Can be frozen.
